Homemade soup is a great option for those trying to lose weight. It is a great way to eat lean meat and vegetables. The following soup recipes are low in sodium, high in fiber and a filling meal without excessive calories. Plus, they can be made in a Crockpot, so you can come home to a warm meal. (Hint: if Santa didn’t bring you an immersion blender for Christmas, pick one up. It is a great kitchen tool for making blended soups.)
Ingredients:
- 2 quarts water
- 1 cup low sodium chicken broth
- 8 skinless, boneless chicken breasts
- 1/2 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon garlic powder
- 2 tablespoons dried cilantro
- 1 tablespoon cumin
- 3 tablespoons olive oil
- 2 onions, chopped
- 3 cloves garlic, chopped
- 1 large jar of salsa
- 2 cans peeled and diced tomatoes
- 3 tablespoons chili powder
- 1 can whole kernel corn
- 2 cans black beans
Directions:
Turn the Crockpot on high. Add olive oil, chopped onion and diced garlic. Let cook for 10-20 minutes. Then add remaining ingredients, pouring water and stock in last minutes. Lower heat to low/medium and cook for 5-6 hours, or until chicken pulls apart. Top with low-fat sour cream and salsa.
