Homemade soup is a great option for those trying to lose weight. It is a great way to eat lean meat and vegetables. The following soup recipes are low in sodium, high in fiber and a filling meal without excessive calories. Plus, they can be made in a Crockpot, so you can come home to a warm meal. (Hint: if Santa didn’t bring you an immersion blender for Christmas, pick one up. It is a great kitchen tool for making blended soups.)
Ingredients:
- 8 cups diced potatoes
- Onion, diced
- 2 cloves garlic, diced
- 1 package of frozen cauliflower
- 3 cups low-sodium chicken broth
- 3 cups water
- 1 cup low-fat milk
- 2 packages low-fat cream cheese, cubed
Directions:
Combine potatoes, onion, garlic, broth, water and cauliflower in Crock- pot. Cook on low until for 8 hours until potatoes are tender. Add cream cheese and milk. After 20 minutes when cheese is melted, use immer- sion blender to cream soup. Cook for another 30 minutes. Add salt and pepper to taste. Top with chives if desired.
